Hearty Leftover Turkey Soup Recipe

What to do with the leftover turkey from Thanksgiving? Make soup! This recipe is one that has been in my family for as long as I can remember. I grew up with this soup being made by my mom after every Thanksgiving and it has always been a family favorite! To make this soup, you will need the following:

  • The biggest pot you have.
  • left over turkey carcass.
  • any left over turkey pieces you want to add.
  • Carrots 
  • Onion 
  • celery 
  • Potato 
  • pasta 
  • herbs ( rosemary, thyme, oregeno )
  • seasoning (salt, pepper, garlic)

FIRST: Put the turkey in the pot, last year we just stuck the whole turkey in the pot which, once it cooked down left us with the problem of bones. If you can secure it with cheese cloth etc.  then you can get the goodness out of the bones but still keep them contained. 

  • Fill the pot up with enough water to completely cover the turkey. Start it heating to a boil.
  • Cut up carrots, onion, celery, potato and anything else you want to and add to the pot. use herbs like rosemary, thyme, oregeno and season to taste with salt and pepper. Add all veggies, turkey pieces at this time to cook with the carcass and let it simmer all day.

All you really need to do is mix it all together and let it simmer and simmer all day until everything is soft and cooked. Stir and taste. If it needs more of this or that, such as salt or pepper etc, add it in until you have it tasting just right. When the vegetables are soft it is ready.

If you put the whole turkey straight in the pot you need to pick the bones out as best you can.
